HAUTE HOLIDAY - A Classic French Dining Experience

Chef Amalia Moreno-Damgaard will delight a private group with a sit down one-of-a-kind five-course small plates
dining experience in the classic French tradition, which includes:
· Crevette Cognac Flambe - Garlic shrimp flamed in
cognac
· Coquilles Au Naturel - Scallops poached in white
wine with fresh herbs and lemon
· Citron Vert - lime sorbet
· Tournedos de Boeuf a la Bearnaise et Pommes
Duchesse- beef tenderloin medallions and hollandaise-tarragon sauce with fluffy
potato peaks and glazed carrots
· Salade Lyonnais - Greens with champagne vinaigrette
and poached egg
· Poires Pochees Au Vin Rouge - Pears poached in red
wine with Chantilly cream and dark chocolate shavings
· Select wine pairings
