Guatemalan Chirmol
Charred Tomato and Mint Sauce
About 2 1/2 cups
5 roma tomatoes, charred, chopped ¼ cup of fresh mint leaves, chopped ½ cup onion, small dice 1-2 Serrano peppers, chopped (optional) Kosher salt to taste
Char on stove top or grill tomatoes until skins blister and tomatoes are soft. Chop them, but do not peel them. Combine all chopped sauce ingredients and season with salt.
