Salsa de Frutas

Fruit Salsa


Serves 6-8

1 cup pineapple, small dice
1 cup ripe papaya, small dice
1 cup ripe plantain, small dice


Spiced syrup
½ cup brown sugar
½ cup maple syrup
1 ts. allspice berries
1 stick Mexican cinnamon
1 tsp. black peppercorns
½ tsp. whole cloves
1/2 cup dark rum
Fresh edible flowers or mint for garnish

Make syrup by combining all ingredients listed, except mint.  Simmer for half-hour to develop flavors.  Strain and cool.  Add rum.

Combine all fresh fruit in a medium bowl and pour syrup over the salsa.  Chill up to 30 minutes to an hour before serving.  Garnish with edible flowers or mint right before serving.
